aka Parmesan Cheese
A favourite hard cheese for many, this fruity nutty cheese is named after two locations in Italy, Parma and Reggio Emila. It is a protected product (PDO) being produced only in permitted regions ensuring its unique quality and link to those regions. It's a key ingredient in many Italian pasta dishes and some even say it is a 'healthy cheese'.
Try grating Parmesan circles on greaseproof paper, put in a low oven for 10 mins until melted - makes a tasty & crispy garnish.

This is the eighth book from chef, restaurant owner & food writer Thomasina Miers (The Guardian). A regular guest on Saturday Kitchen and other cookery shows, her passion for ingredients, flavours and food creation abounds. I ate at one of her Wahaca restaurants in London last year and the combination of the decor, the buzz, the cocktails and the flavours was unforgettable.
Mexican Table has over 100 bright & zingy recipes accompanied by vivid sumptuous photos. Released on 21 August (Quadrille Pub Ltd), this is one for the shelf.
