Paradiso - Recipes & Reflections

Years before Ottolenghi, Anna Jones and The Happy Pear were creating innovative recipes with the humble vegetable, there was one chef consistently making big waves in the world of vegetarianism. Denis Cotter, who founded his restaurant Cafe Paradiso in the early nineties was one of the first chefs in Ireland to serve original high quality vegetarian food. I had the opportunity to work there as a commis chef for a few months in 2001 and took a lot of pride in making the Paradiso signature soups, parmesan crisps and fried polenta wedges, recipes that remain with me to this day.

Opening its doors on Washington Street in Cork in 1993, Cafe Paradiso has always remained true to itself. It never looks for the limelight, over-expands its offering or compromises the quality of its food or service. It has been an institution since the beginning and with many chefs coming and going through the years, the menu has evolved to adapt to today’s more adventurous vegetarian palates.

Since the beginning, Denis Cotter has always believed in promoting the benefits of cooking with local produce and I believe he was one of the first chefs in Ireland to lead the way on this ethos along with Darina & Myrtle Allen. This consistent support over the last thirty years has contributed to the production of better quality food in Ireland, that still continues to this day. 

Denis has published five cookbooks, the latest ‘Paradiso - Recipes & Reflections’ released in 2023 with a repertoire of recipes from the Paradiso seasonal menus. It also includes food reflections written by Denis Cotter and a foreword by actor Cillian Murphy who has had a long-standing affection for the Cafe Paradiso.

A Book of Mediterranean Food

The story of the British cookery writer Elizabeth David is fascinating. Born in 1913, it has long been acknowledged that she was the inspiration for such modern masters as Julia Child and Claudia Roden.

Born to an upper-class family, Elizabeth David rebelled against social norms of the day. In the 1930’s she moved to Paris where she fell in love with a married man with whom she travelled across Italy, Greece and Egypt up until the time she returned to England in 1946.  Shocked by the inferior food in her homeland after experiencing such a vast array of quality food on her travels, she began writing food magazine articles that quickly caught the attention of the British public. This led to publishing A Book of Mediterranean Food in 1950 at the age of 36.

Up until last year, this cookbook hadn’t been available since the 1960s. Grub Street Publishing was delighted to publish a hardback reissue for the cooks of today to experience.

The book presents a collection of recipes from the time Elizabeth lived in France, Italy, the Greek Islands and Egypt and contains Mediterranean recipes such as soupe au pistou, pebronata from Corsica and the skordalia of the Greeks. The recipes are described as being sumptuous, simple and sublime as they introduced garlic, olive oil and herbs to Britain's post-war kitchen table.

The book also includes interesting stories from Elizabeth’s travels and extracts from famous authors. It is one to sit down & read while letting your imagination travel back in time to the modern culinary awakening.

Seed to Supper

This children's book by author Michelle Darmody is filled with interesting information about the food we eat from seed to table. Each page is jam-packed with illustrations and food facts that most of us may not be aware of including seed types, tips on saving seeds, the importance of soil quality and even how astronauts grow food in outer space. She also gives readers suggestions about cooking with the scraps of food that we usually throw in the bin to help us to reduce food waste in our everyday kitchen.

I recently heard an interview with the author Michelle Darmody on the Claire Byrne show, RTE Radio 1. The way she spoke about food was both passionate and engaging - you couldn’t help but immersing yourself in what she had to say. Having a PhD that focused on environmental food education for children, Michelle Darmody has been at the centre of the sustainable food culture in Ireland for many years.  She has also started up two restaurants in Dublin, is an award-winning columnist for the Irish Examiner and runs a food consultancy business providing workshops on the importance of food and the environment. The more I researched Michelle's biography, I discovered that there is a very long list of ways that she has contributed to our sustainable food movement, particularly through the education of children (find out more here https://www.michelledarmody.com/).

Her book Seed to Supper - The Journey of Your Food from the Ground Up is one that I would have loved to have read as a child and even now as an adult. With bright and colourful illustrations by Ruth Graham, this book is definitely one to have on the bookshelf that can be pulled out and referred to time and time again.

This new cookbook just released looks like it has plenty of inspiration for the adventurous chef. Filled with recipes not typically on our everyday menu, this book will tempt home cooks to take risks in the kitchen to create alternative dishes to share with friends & family. Having eaten in an Ethiopian restaurant in Boston many years ago, I have a memory of sitting on the floor and eating with my hands.  As you can imagine, it was messy but very delicious.

Gursha includes recipes like Berbere (an Aromatic Ethiopian Spice Blend) and Messer Wot (Red Lentil Stew). The author Beejhy Barhany is the chef and owner of the vegan and kosher restaurant Tsion Cafe in Harlem. In Gursha, she tells her story through food, bringing together more than one hundred dishes from her restaurant, her family, and her travels. It sounds like it is more than just a cookbook with plenty of stories about her heritage, rituals and traditions.

The Flavour Thesaurus

Many years ago a friend of mine gave me this book out of the blue. She knew I had a passion for food and took it from her own repertoire for me to add to mine. I was very grateful as this book teaches you about a wide variety of food combinations and recipes cleverly presented across the pages. It comes highly recommended by food critics and renowned chefs for its informative content & original pairings, including Nigel Slater and Yotam Ottolenghi.

One example comes to mind where the author Niki writes about Hazelnuts & Garlic and compares this pairing to Spanish picada which is a sauce made from pounded nuts, garlic, bread & oil.  She goes on to write a short recipe to try (15 hazelnuts, 15 almonds, slice of crusty bread fried in olive oil pounded together in a pestle & mortar with 2 cloves of garlic). Who wouldn’t want to try this deliciousness?  Another example is the Peanut & Tomato combination called mafe that is popular in West African dishes.  Her description is followed with a simple recipe to make a hearty meat stew using these ingredients.

The Flavour Thesaurus is not just any recipe book - as the saying goes, there is both eating & drinking in it! It is one you can sit back & take the time to read or dip in & out of depending on the flavour of the day. (published 2010 by Bloomsbury)

MOWGLI Street Food

Someone recently recommended this cookbook to me saying that if there is one Indian recipe book I should have on my shelf, it is this one.  Of course I made the purchase and it did not disappoint.  Nisha Katona is the founder of the Mowgli Street Food restaurants in the UK that I was lucky enough to experience last year.  This book introduces a selection of unique recipes from her menu that are simple & delicious.  The combination of spices, herbs & ingredients in each recipe feels like a true lesson in Indian cookery.  Keralan Black Treacle Salmon (Savour Magazine UK)

Greekish

A regular on Saturday Kitchen, chef and food writer Georgina Hayden released her fourth cookbook 'Greekish' in April last year.  Inspired by her Greek & Cypriot roots, the book is filled with a selection of alternative recipes that are easy to prepare, especially as we approach the Summer months. There are many one pot & oregano filled recipes but this one caught my eye.

Brutto - A (simple) Florentine cookbook

When I picked up this book in Easons book shop last week, I had no idea about the story behind it. The unique cover first caught my eye followed by the rustic feel of the page paper and beautiful authentic photographs throughout, it really felt Italian.

Having done some research, I was sad to learn that the author & London-based restauranteur Russell Norman died tragically in 2023 following the publication of the book leaving behind a legacy of true culinary authenticity.

MOB Veggie Cookbook

I recently had a flick through this cook book that my brother had lying on his kitchen counter.  Each page was filled with colourful food photos and simple recipes - I wanted to try them all. 

The book was released in 2019 by the MOB kitchen, an online food channel that has been growing momentum since 2016. Its founder & CEO Benjamin Lebus is passionate about food and has a great story to tell as his phenomenal success grows from strength to strength.    MOB Kitchen website

RTE Short Story Competition 2025

This annual writing competition is now open for entries. It is in honour of Irish novelist Francis MacManus and has been the launchpad for many Irish writers' careers since its establishment in 1986, being one of Ireland's longest established and most significant literary competitions. 

The top prize is €5,000 with smaller prizes being awarded for the remaining ten shortlisted stories. The chosen writers will have their stories broadcast on RTÉ Radio 1 and published on rte.ie/culture. Prizes are awarded on an Arena/ RTÉ Short Story special live programme in the autumn.

Deadline for entries is 23 May 2025.
