Maple & Spelt Cookies

 

Makes: 12 cookies

 

175g Brown Spelt Flour (Doves Farm is a good option)

90g oats

1/2 tsp. baking powder

2 tsp. cinnamon

80ml maple syrup

100 ml sunflower oil

 

Preheat oven 190°C, Fan 170°C, 375°F, Gas 5

Mix together the flour, oats, baking powder and cinnamon.  Add the maple syrup and sunflower oil and combine well until the mixture becomes a thick batter. 

Grease a large baking tray with oil or butter.  Take a tablespoon of the batter and shape it into a ball with your hands.  Place on the baking tray lightly flattening into a cookie shape.  Continue until all the batter is used.

Put the baking tray into the preheated oven for 10-12 minutes until browned and crisp.  Remove and allow to cool on a wire tray.

 

Chilli Sweet 'n Spicy Cashew Nuts

 

Serves: 2 - 4 people

 

300g raw cashew nuts

25g butter

2 tbsp honey or maple syrup

1 tsp ground cumin

½ tsp chilli flakes

Pinch salt


Preheat oven 170°C, Fan 150°C, 335°F, Gas 3

Melt the butter and honey or maple syrup in a saucepan over a medium heat. Once melted, stir in the cashew nuts and coat with melted butter mix.  Add the spices and salt until well combined.  Remove from heat.  Turn out the nuts onto a large greaseproof-lined baking tray making sure to spread out evenly.  Put the tray into the preheated oven for 10-15 minutes.  Once crisp & lightly browned, remove from the oven and allow to cool slightly.  The cashew nuts are delicious served warm or cool & crunchy as a snack.  Store in an airtight container.

Tip: Make sure to keep an eye on the nuts as they bake - they can burn very quickly!
