PEPHER Summer Virgin Margarita

Makes one cocktail
Margarita
2 slices fresh ginger
3-4 limes, juiced
60ml coriander chilli simple syrup (see below)
1 orange, juiced (optional)
Sparkling water
Simple Syrup
450ml water
350g sugar
Bunch of coriander (leaves & stems)
1 red chilli, slit lengthways
2-inch piece of ginger
Zest of 2 limes
Sugared Rim
2 tsp granulated sugar
1 tsp sea salt
1 tsp ground ginger (optional)
To make the syrup, put all the ingredients into a saucepan and bring to boil. Reduce heat and simmer for 5 minutes until the sugar has fully dissolved. Remove from heat and allow to cool, letting the coriander, ginger and chilli infuse in the syrup. Once completely cooled, strain into a jar or bottle with a lid. Close tightly and store in the fridge. (This will last in the fridge for up to one month.)
Next, mix the sugared rim ingredients on a saucer and set aside
To mix the cocktail, brush some simple syrup on the rim of a rocks glass and dip into the sugar mixture. Add the ginger slices to the glass and muddle to release the juice. Pour in the lime juice and simple syrup. Add the fresh orange juice (if using) and top with sparkling water. Stir ingredients or shake if you prefer. Serve with ice, a few slices of fresh red chilli & wedge of lime.
