Indian Vegetarian Alternative

Paneer cheese is commonly used in Indian dishes as an alternative to meat. It is soft non-melting cheese made from cows or buffalo milk and formed with the addition of an acidic ingredient like lemon juice or vinegar.

It is usually cubed & added at the end of a sauce preparation as it only needs to be heated through. If cooked for too long, it can become tough and rubbery. 

Tip: Make a large batch of your favourite Indian sauce and divide it into two for both meat lovers & vegetarians.
